Beachbum, I think these " bisckets" (sic) that Lizard writes of are more of the cookie variety. I'm expecting them to be the featured dessert at the Lizard Joe's Beach Weekend Event so I can try one

Paul, do you do a Tim Tam Slam or do you just eat them straight up? I was first introduced to them at my brother's house in Thailand - and it was Tim Tam Slam, and lots of fun! Just like here, sweltering hot, humid, with a hot coffee and our biscuits....mmmmmmmmm

La Costeña brand "Frijoles Bayos Enteros" - canned beans - offer a good start to fairly quick baked beans.
I'd pour off some of their sauce, unless you like your beans really soupey. It's up to you after that. I like adding barbecue sauce to boost the tomato, chile, vinegar, sweet content in one shot. (Hunts Original BBQ sauce works ok and is available at almost all the local chain grocery stores.) You can add sweet white onion or sauteed yellow onion, garlic (or not) - toasted, roasted, or sauteed? , crisp-fried bacon, or a ham hock(?), ... molasses, brown sugar, or honey with a little vinegar to balance the taste. I also like some powdered chiles and then a little dried mustard to contrast the sweet... Your final mix can be microwaved to help the new flavors penetrate the beans, but usually it takes 6 hours to overnight for the added flavors to penetrate the beans. mmmmmm.... Some locals add episote (sp?) (pull it out later): a green leafy herb to absorb/neutralize whatever it is that makes us gass-y later. Good local black bean dishes have the skins strained-out to keep them from being gass-y later... |

Thanks Wiz...We started buying that brand last year and they are about as close to baked beans as we have found.
I just couldn't remember the brand name. |
