1. Don't let your dough rise more than once. It becomes too airy and bread-like. 2. Establish an even greater base of shredded mozzarella, to avoid premature browning. 3. If you put your pizza sauce in a blender, the red pepper flakes will liquefy and make the sauce too spicy. Don't do this.
I think next I will try a white pie...just a ton of ricotta and mozzarella, with some fresh garlic.
